Scheduled to open in 2021 as an elegant country house hotel, The Cashel Palace is set to become one of Ireland’s premier hospitality designations. The hotel has already been accepted as a member to the prestigious Relais & Chateaux group. It will offer 45 sumptuous bedrooms, a spa and a range of dining options. Sat beneath a National Monument and being a listed building, this project has offered many challenges and involved exploring numerous avenues for redevelopment.
Beginning as a small side project, this revamp of a C19th pub took on a life of its own. A listed building at the heart of a historic town, the brief was to restore and create a convivial, buzzy and welcoming bar and restaurant which would become a well-loved local haunt as well as a tourist destination.
An extensive and multi-faceted project which developed organically over a ten year period. The aim was to piece back together the estate and restore the semi-derelict farm buildings and outhouses along with the walled gardens. The project involved liaising with multiple heritage and conservation specialists and in turn overseeing the various different elements of the refurbishment. An ambitious landscaping scheme was planned and implemented. A carefully chosen design team was put together and we worked to source, create and curate the interiors and furniture for the Georgian Manor House and adjoining cottages. Following completion of this stage, we oversaw the transition from guest cottages to a boutique hotel. The final phase of the project saw the sensitive addition of an orangery to facilitate large events.
Situated on the Tankardstown Estate, Brabazon Restaurant was opened in an old stone hay barn. Ran the project from concept to completion, sourcing the furniture, putting together a kitchen team, developing a working kitchen garden to supply produce and managing the launch. The restaurant developed a following of its own and garnered many awards.
This project involved the purchase and refurbishment of an historic coaching inn situated in a picturesque castle village north of Dublin. The project was time and budget sensitive and equally had to relate in some way to the style and identity of its affiliated sister property. Working with a network of trusted suppliers and collaborators, we managed to open the doors of the fully-refurbished 15-bedroom boutique hotel and restaurant in under three months. Managed the opening and operation of the business for three years.
Based in a converted Georgian butcher shop, the bakery project benefited from many charming features but posed a number of challenges in retaining them whilst implementing contemporary health and safety requirements. To maximise the street-facing windows and period wooden plank shop floors, we created a small coffee shop and retail area. Sourced all the equipment for the kitchens and ran the project on-site. Developed the branding and vision for the bakery. Collaborated with well-known food stylist to design merchandising and food display strategy and to photograph the space for press opportunities.
This project involved the extensive refurbishment of an historic C19th mews house on a quiet lane in Dublin. Working in collaboration with Sketch Architects, a sensitive, design-led approach was taken to ensure that the character of the original building was emphasised. The existing shell was restored exposing masonry walls which were lightly lime washed and left visible.A cobbled front terrace filled with plants leads to the entrance which has custom joinery incorporating a bench and coat cupboard. A small guest snug is discreetly positioned behind a flush pocket door. The original shell now houses two en suite guest bedrooms that open to a light-filled double height entrance hall. A glazed link connects to the contemporary open plan kitchen, dining and living area. The focal point of this space is the landscaped courtyard garden at the heart of the home with large glazed doors folding back allowing the indoor and outdoor to merge. The selection of architectural materials and furnishings was carefully considered to create a soft, serene and calm atmosphere.
